Before disabling access of the ex-employee, you can first view both users from the Scheduler and move each booking manually (drag from ex-employee to new employee.) Next, you can go to Advanced → Job Templates and update the assigned user.
Once the above steps are already completed, you can make the ex-employee an inactive user
Note: There is no other way of updating jobs with the new assigned user except updating manually in the Scheduler or in the Job screen.
